Brownies

Who doesn’t love brownies? Well, besides me. Brownies aren’t even close to my favorite dessert, but I do make them every so often. This batch was specifically for my friend Tracey, who passionately loves them. Dan ( husband/resident chocoholic) loves brownies, too–provided they are home made with the fanciest chocolate available to us. (Usually Callebaut)

That’s the thing about brownies–they are so simple to make. I use a Cooks Illustrated recipe, specifically one from this book, but poke around a recipe site like Epicurious and you’ll see that most brownie recipes are mostly the same. What matters are the ingredients, especially the chocolate itself, but I wouldn’t use discount butter either.

The truth about making brownies is that making them from scratch isn’t harder or more time consuming than making them from a mix. But the results are so much better that people will assume you have some mysterious kitchen superpowers because so many people make them from a mix. Even though brownies aren’t my favorite dessert, I definitely appreciate a homemade chocolaty morsel.

I know you’re a super chef when it comes to savory dishes, but I don’t think you can ever top these brownies. Ever.
